Season with salt and pepper
Allow the steak to come to room temperature for about 30 minutes to ensure even cooking.
Heat a cast-iron or grill on high. Let it get very hot—this helps create a great sear on the outside while keeping the inside juicy
Add a tablespoon of butter to the pan and let it melt fully
Place the steak in the hot pan and sear for 3-4 minutes per side for medium-rare, or adjust time based on preferred doneness
Use a meat thermometer to check doneness. For medium-rare, aim for an internal temperature of 120-130°F
Remove the steak from heat and let it rest for about 5-10 minutes to let the juices redistribute

Flip the steak only once to get an even sear
Butter Basting: During the last minute of cooking, add a pat of butter, fresh rosemary, and garlic to the pan and spoon the melted butter over the steak
Slice against the grain to maximize tenderness
