Ingredients
For the Wagyu Skirt Steak

1lb Wagyu Skirt Steak

2 tablespoons olive oil

2 teaspoons chili powder

2 teaspoons ground cumin

½ teaspoon cayenne pepper

1 tablespoon paprika

1 teaspoon oregano

Salt and pepper, to taste
For the Tacos

6 small flour or corn tortillas (your choice)

1 ripe avocado, sliced
-
½ white onion, diced
-
1 lime, cut into wedges
-
1/2 cup shredded cheese (cheddar, Monterey Jack, or Cotija work well)
Directions
Prepare the Skirt Steak
In a small bowl, mix together the chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and pepper
Evenly coat the wagyu skirt steak with the seasoning mix
Cook the Skirt Steak
Heat a grill or skillet over medium-high heat. Once hot, cook the skirt steak for about 2-3 minutes per side for medium-rare, or longer for your desired level of doneness. The steak should develop a nice sear on the outside.
Once cooked, remove the steak from the heat and let it rest for 5-10 minutes. This allows the juices to redistribute and keeps the steak tender.
Assemble the Taco
While the steak is resting, warm the tortillas on the grill or in a dry skillet for about 30 seconds on each side.
Slice the skirt steak against the grain into thin strips.
