Wagyu Beef Shank

Rosemary sprigs

Twine (food safe, heat safe)

Tallow or butter if desired

Onion

Carrots
-
Celery
-
Tomate paste

Red Wine

Beef Stock
Directions
Trim Hammer Bone Shank if needed
Place rosemary vertical around roast & tie with twine
Season the roast generously with salt and pepper
Sear the on all sides in a pan with hot tallow
Remove roast from pan and place in a large pot
Add your chopped onion, carrots, celery, tomato paste & cook until caramelized
Once caramelized, add red wine and allow it to cook down then add beef stock to the pan
Once pan is at a constant broil, add to large pot with roast
Make sure liquid is covering half the roast then wrap the exposed bone is foil, cover the top of the pot and place in oven for about 3-4 hrs
Remove the roast from the oven, remove twine & enjoy!
